Is it better to boil or roast tomatillos?

The most authentic salsa verde features boiled tomatillos. This creates a bright, acidic flavor that goes great with steak and other meaty flavors.

But personally, I like roasting tomatillos better. It creates a deeper, more complex flavor and cools down some of the acidity. And it helps add interest to simple meals like rice and beans.

Roasted Tomatillo Salsa

Ingredients

Main Ingredients

  • 5 tomatillos husks removed
  • 1 jalapeño
  • 1 garlic clove peeled
  • 0.5 tsp salt

Instructions

Recipe Steps

  • Turn broiler on (or heat oven to 450 degrees Fahrenheit)
  • Once preheated, place all ingredients except salt, under broiler
    5 tomatillos, 1 jalapeño, 1 garlic clove
  • Broil until skin is blistered, approximately 5 minutes
  • Remove from broiler. Place ingredients into blender.
  • Blend on high until smooth. Add salt to taste.
    0.5 tsp salt
  • Serve with tacos or raw vegetable strips.
